Matt Cooper Bites
Ingredients

Half a bag of Butter Chicken Curry Kit
-
300g pasta (dry weight)
-
300-400ml chicken stock
-
3 tbsp vegtable oil
-
400g passata
-
500g chicken breast
-
3 tbsp cream cheese
-
Cheese of your choice to top the pasta bake
-
1 tsp Masala Chip Seasoning - optional
-
Fresh coriander garnish
Directions
Add 3 tbsp of oil into the pan on a medium heat and add half the Butter Chicken Curry Kit and fry for 1 minute. Add a splash of water if the spices are catching in the pan.
Add the chopped chicken breast, ensuring the chicken is fully coated in the spice mixture. Cook until the chicken turns slightly white on the outside.
Add the passata, stir and cook for 3 minutes.
Add the the pasta and the chicken stock and bring to the boil. Cover and simmer on a low heat for 25-30 minutes.
Take the dish off the heat and stir through the cream cheese.
Transfer to an oven proof dish and layer the cheese and the season with Masala Chips Seasoning.
Grill or oven bake until the cheese is bubbling and melted.
