If you're looking for something different to serve alongside your next curry, these Gunpowder Potatoes are well worth a go. Crispy roasted potatoes are tossed with garlic, cumin seeds, black mustard seeds and our Matt Cooper Bites Masala Chips Seasoning, then finished with fresh lime, spring onion, chilli and coriander.
This recipe comes from Matt Hutson, and it's an absolute belter. You get properly crispy potatoes, plenty of spice and a fresh hit of lime at the end that cuts through everything beautifully.
Serve them alongside your favourite curry, pile them onto the table as part of an Indian-inspired feast or just get stuck into a bowl on their own.
What Are Gunpowder Potatoes?
Gunpowder Potatoes are an Indian-inspired spiced potato dish that has become particularly popular on British Indian restaurant menus. There are loads of different versions out there, but the general idea is simple: crispy potatoes combined with aromatic spices, plenty of seasoning and something fresh and sharp to finish.
Despite the name, there's obviously no actual gunpowder involved (believe it or not). The name refers to the punchy combination of spices and the kick of heat traditionally associated with the dish.
Our version starts with par-boiled potatoes roasted in hot ghee or oil until they're beautifully golden and crispy. Garlic, cumin seeds and black mustard seeds are then added before everything gets a generous coating of our Masala Chips Seasoning.

The Perfect Curry Night Side Dish
If you're used to serving your curry with nothing but rice and naan, give these a try instead.
The crispy edges work brilliantly with rich curry sauces, while the fresh lime, coriander, chilli and spring onion stop the potatoes from feeling too heavy. They're especially good when you've got a few different curries on the table and everyone can help themselves.
They serve four as a side dish and, although they take around an hour to roast, there's very little actual work involved. Just give them a turn every 20 minutes and let the oven do the rest.
Another Way To Use Our Masala Chips Seasoning

The seasoning brings everything together without needing to measure out loads of individual ground spices. Combined with the whole cumin and mustard seeds, garlic and fresh lime, you get a seriously flavour-packed Indian potato side dish that's simple enough to make at home.

Ingredients
- 4 tbsp ghee or oil

6 medium/large potatoes - peeled, quartered, and then par boiled

3 cloves garlic - finely chopped

1 tsp cumin seeds
- 1 tsp black mustard seeds
-
2 tbsp Matt cooper bites masala chips seasoning
-
Salt to taste
- Good squeeze of lime
-
Chopped spring onion, mild red chilli, coriander for garnish
Directions
Heat the ghee/oil in an oven proof tray, until bubbling
Once the potatoes are par boiled, season with salt, add them to the tray, and coat in the hot ghee
Roast in the oven at 190 for an hour, turning every 20 mins, until golden and crispy
- Add the garlic, cumin seeds, & black mustard seeds and stir to coat
Add the Masala Chips seasoning, give them a shake to cover the potatoes
Give the potatoes a good squeeze of fresh lime, garnish & serve
