Can I Freeze Them?
We don't recommend freezing these hot pockets. They're definitely best enjoyed fresh, as freezing and reheating can affect both the texture of the chicken and the melted cheese filling.

Ingredients

500g chicken mince

4 tbsp Matt Cooper Bites Tikka Spice Blend

0.5 tsp red food colouring

Mozzarella cheese

Golden breadcrumbs

Salt to taste
Directions
Mix the mince, Tikka Spice Blend and food colouring in a bowl, ensuring the spice blend has an even coverage. Leave covered in the fridge overnight for best results or for at least an hour.
Roll out piece of parchment paper large enough to fold each pocket over with.
Take half your mince, apply to the greaseproof sheet and form a circle. Try and keep the mince around 0.5 inch in thickness as you then spread the mince out.
In the middle of the mince, add your cheese and any other toppings you wish to add.
Roll the mince over using the grease proof paper, connecting the two ends. Seal the ends by pressing them down.
Season the top with breadcrumbs and a sprinkle of salt.
Apply a splash of oil or oil spray alternative to a baking tray. This will stop the pockets from sticking. Do the same if using an air fryer.
Cook for 35 minutes on 200 in the oven. Alternatively you can air fry these on 200 for around 25 minutes.
