There’s something special about a bold, fiery Madras curry, and with this Slow Cooker Madras Recipe, you can bring that classic heat and depth of flavor to your table with hardly any effort. Using my Madras Curry Kit, you’ll have everything you need to create an authentic, perfectly spiced curry without the fuss of measuring or mixing. Simply add all your ingredients — meat, onions, tomatoes, and the contents of the kit — straight into the slow cooker, stir, and let it gently simmer away.
This recipe focusses mostly on convenience. For a more authentic tasting Madras, please follow the original Madras recipe.

Ingredients

Half a bag of Madras Curry Kit

600 g chicken breast – chopped into large chunks

3 tbsp vegetable oil

400 g passata or chopped tomatoes

200 ml chicken or vegetable stock

2 tbsp single cream or dairy free cream alternative

Bunch of fresh coriander
-
1 tbsp fresh lemon juice
Directions
Prepare all the ingredients and add them all to the slow cooker, apart from the coriander, single cream and lemon juice.
Cook on high for 3.5 hours or low for 6 hours. If the curry is too runny, take the lid off for 30 minutes and continue cooking.
Add the cream, coriander and lemon juice just before serving and stir.
Serve
